You can never have too many soups! And January is certainly the month for getting cosy with a bowl of something slurpy and hearty. So today I’m sharing the recipe for broccoli ginger soup. You can really make it your own in terms of the toppings: spring onion, sesame, sesame oil, chilli flakes, chilli oil, tamari, whatever you have to hand.

Broccoli ginger soup
Serves 2, takes 25 minutes
2 tbsp coconut oil
1 onion, finely chopped
2 garlic cloves, finely sliced
1 large thumb of ginger, finely grated
100g basmati rice
1 litres quality veg/ chicken stock or broth
1 large head broccoli, including the stalk
2-3 tbsp miso - I use white miso (depending on the strength and saltiness of the brand)
1 lemon or 1 juicy lime
Sea salt & pepper
Toppings:
1 handful sesame seeds
A dash of toasted sesame oil
Chilli flakes or chilli oil
A dash of tamari
Spring onions
Melt the coconut oil in a large pot then add the onion and fry for 8-10 minutes until soft. Add the garlic and ginger, fry for another minute then add the rice and stir to coat in the onion mixture. Pour in the stock, simmer with the lid on for 10 minutes then add the broccoli and cook for another 3 minutes until the broccoli is tenger and bright green.
Remove from the heat, stir in the miso and lime juice. Taste for seasoning, adding a dash of toasted sesame oil, tamari, chilli flakes or chilli oil if you like. Top with sesame seeds and spring onions.

When you want something refreshing at the end of the day but are Dry January-ing, the designated driver or simply cutting back and having a break from booze, these wonderful low and no alcoholic drinks do just the job.
Feragaia - distilled in Scotland, this is delicious and served in Michelin starred restaurants the world over.
Momo Kombucha - my fave kombucha run by a husband and wife - fave flavour is the hisbiscus and they give a % of each bottle sale to the wonderful breast cancer support charity Future Dreams
Mother Root London - I adore ginger so this fiery ginger ‘switchel’ *prohibition style American drinking vinegar’ is right up my street
Aqua De Madre – award winning super tasty, flavoured water kefir, made in East London
Wild Idol - I enjoyed this over my pregnancy - alcohol free, champagne esque
Belu ginger ale - especially because they give their profits to one of my favourite charities, Wateraid.
Pentire – a botanical made in Cornwall with sea buckthorn, meadowsweet and rosemary. Love it garnished with pink grapefruit and topped with tonic.
Wildpress – pressed apple juice made from Somerset apples, love it topped with sparkling water. They have a huge range of juices based on what apples they’ve got to press.
Seedlip – I always go for the aromatic Spice 94 bottle. Delicious with tonic.
Three Spirit – made in the UK, they do different mixes to suit your mood.
Biona coconut water – so refreshing on a hot way or after a workout.
