Hello and happy 2024! I hope you’re all having a wonderful start to the year. We have been living in our new home for 2 months (still building work, still unpacking!) and celebrating our first Christmas as a family of 4. Summer has turned 6 months and is a delight - first words “ba ba ba”. Sweet Nelly has been in and out of the surgery but loves her little sister and very much enjoyed her own festive dinner of turkey, potatoes, carrots and greens (hold the gravy).
I’m kicking off January with a new soup recipe. This *any veg bean ribollita* is hearty, warming and the perfect way to clear out the veg drawer. Use any onion/leek/spring onions you have, any root veg and greens you like, and any beans you find in the cupboard (borlotti and cannellini beans are especially good here).
