Hi Amanda, wishing you all the best with your recovering! A few of my favourite comfort evening meals are recipes like my any bean chilli, lentil mushroom Bolognese, minestrone and coconut lentils. Once a week I’ll batch cook one of them and so I’ve built up a healthy homemade ready meal selection in my freezer! Then I reheat then stirring in some fresh greens like chopped kale or baby spinach which wilts quickly. Hope that helps Amanda. Thanks so much for being here!
