This looks great but is a mixed bag when it comes to shopping, affordability and sustainability. Brussel sprouts are a great winter vegetable, hower fresh mint is a summer herb.
You could swap mint for a winter herb like thyme or rosemary, in which case I would add these to the roasting tray at the start to cook with the sprouts. I always try to take affordability and sustainability into account when creating recipes and only use ingredients such as pomegranates rarely, on special occasions such as Christmas x
