Hello hello, I’m thrilled that at 5pm tonight when I was finishing up my walk around the block, it had only just got dark. One lady and I passed each other a few times on our respective power walking circuits and shared a lovely moment rejoicing in the fact that the days were getting longer. I really feel the difference in my energy as we eke out a few more minutes of sunlight each day and I’ve loved spotting snowdrops & the first daffodils earlier this week.
At the end of last year, the lovely food magazine, Ocado Life asked me to come up with 4 joyous recipes to kick off 2025 with colour, flavour, veg & plant points.
I absolutely loved developing them and recipe testing and excited to share them here with you. The professional looking photos (further down in this email, it’s a long email today with all the food pics) are shot by the magazine but thought you’d like to see the real life pics of my recipe testing days. When I develop recipes for magazines or books, I take a few pics throughout the process to remind me when I’m rejigging presentation or tweaking quantities or to give notes to the editor.
The 4 veg packed recipes for you to save are:
Miso Mushroom, Tofu and Spinach Soba Noodles
Squash and Rosemary Lentils
Leek and Sprout Spaghetti
Parsnip Fritters with Pomegranate Salsa and Lime Yoghurt
Weekly Meal Planner
I wrote up a day by day guide for meal planning here. There’s endless reasons I love meal planning but 5 main reasons are because it:
Helps us eat more fruit & veg & a greater diversity of them
Helps us eat less ultra processed foods & eat more real foods
Helps us waste less food
Helps us save money
Helps us spend less time cooking & more time eating together as a family
Inspired by the recipes, tips & ideas from my book Real Healthy, here’s the weekly meal planner that I use at home. Hopefully you can print it out and use it. I’m trying to organise getting these printed, would you buy them?
In the meantime, some cute ones I’ve found online:
This one on the left and this one on the right (they have magnets for fridge hanging )
Or keep all your meal plans and recipes (ideal for if you ever write a cookbook!? This reusable white board would be fun for getting the family involved.
Onto the recipes
