Whether you are a summer-loving sun worshiper or the type of person who prefers to curl up by the fire with a good book while the rain patters outside, the long winter months can be challenging. With short days and cooler temperatures, I have recently been struggling to get up and at it in the morning and have noticed lower energy levels come 4pm when it’s dark outside but there is still lots of work to be done before I can crash on the sofa. Below my tips is a brand new recipe for my lazy one pot broken lasagne. Yes that’s right! It’s a one pot lasagne where you make a hearty tomato, porcini and lentil base then break lasagne sheets directly into the sauce, bake it in the oven until the pasta is just al dente then tear over mozzarella and grill for a few minutes to give that creamy, bubbling cheese factor.
