Spring is in full swing so here is a quick round up of my favourite seasonal recipes, including wild garlic, asparagus and all things green!
Fried eggs with spring onions, frozen peas and coriander lime drizzle
Feeds 2, takes 15 minutes
For the eggs:
3 tbsp olive oil
Bunch of spring onions (about 6), finely chopped
Pinch of chilli flakes
400g frozen peas
4 eggs
100g feta
1 tsp black and white sesame seeds, optional
For the coriander lime drizzle (makes extra)
Large bunch of coriander (approx 50g), stems and leaves, finely chopped
1 green chilli, finely chopped
Zest and juice of 1 unwaxed lime
6 tbsp extra virgin olive oil
Sea salt and black pepper
For the coriander lime drizzle, mix all of the ingredients together in a bowl and season to taste with a pinch of salt and pepper.
For the eggs, heat the olive oil in a large frying pan over a medium heat. Once hot add the spring onions, a pinch of salt and black pepper and fry for 5 minutes until soft and golden.
Add a pinch of chilli flakes, fry for another minute then. Add the frozen peas, stir to coat in the spring onion mixture for a few minutes then make four gaps in the pea mix and crack in the 4 eggs.
Pop a lid on and cook for about 4-6 minutes until the whites are set and the yolks are still runny. Crumble over the feta (and sprinkle over the sesame seeds if using) and serve with the coriander lime drizzle, plus extra chilli flakes if you like.
