You know I love leftovers so I’m in the habit of making extra of nearly everything. But one thing that I always ensure I have extra of is cooked rice. It’s such a useful thing to have on standby in the fridge for a quick working lunch. Today’s recipe is a great example of this - it’s easy, speedy (only 15 minutes) and perfect for using up the odds and ends in the fridge. I love it with cauliflower but you could swap for whatever veg you’ve got. Likewise with the herbs and spices, it’s very flexible. If you make it, please share your creations.
