Hopefully you’re opening this email from the comfort of your bed with a lovely steaming cup of coffee in your hands. It’s a Sunday. You deserve a slow start. And a delicious start. So here are 7 lazy brunch recipes. But before I get to these I thought I’d share 5 things I love doing on a slow Sunday

Making a gentle meal plan and making sure I add some Fairtrade products to the shopping list (bananas, chocolate, coffee, tea, flowers)
Go for a big walk listening to an inspiring podcast - I recently walked around Hampstead Heath with Dr Alex (the UK’s government ambassador for Young Minds), have a listen here to our episode and enjoy his other guests. I’ve also been enjoying the Motherkind podcast and State of Mind podcast too.
Berry baked oats
Feeds 4, takes 5 minutes hands on + 25 minutes baking time
160g rolled oats
2 small ripe bananas, peeled and mashed
480ml milk (dairy or plant-based)
4 tbsp maple syrup or runny honey
1 tsp vanilla extract
3 tsp ground cinnamon
4 handfuls of berries
To serve
2 large handfuls of chopped pistachios
Greek yoghurt
Honey or maple syrup
Preheat the oven to fan 180°C/gas mark 6 and grease 4 small ovenproof dishes with a little butter or coconut oil.
Mix all the ingredients (except for the berries and the ingredients for serving) together in a bowl, then transfer to the dishes and top with the berries. Bake for about 25 minutes or until golden at the edges.
Remove the dishes from the oven, dollop with yoghurt and a little extra honey or maple syrup, if you like, and enjoy straight from the dishes.
