It’s no secret that I LOVE a noodle salad. A big bowl of cold, slurpy noodles is exactly what I want to eat when the mercury rises and I have a fridge full of bits to use up. Here is my latest version - it’s a super sesame one that works especially well as a packed lunch. Feel free to freestyle the veg and protein depending on what’s in the fridge and what’s in the cupboard. The key is crunch, colour and using up what needs using up.
