I’m sure you know by now how much I love chickpea flour so it’s probably no surprise that I’m using it to make my pancakes this year. I like to make a big, big stack (people will always eat more than you think) and lay them out with lots of filling/topping options. I’ve suggested some of my favourite fillings below but go with whatever your Pancake Day heart desires! If you’re lucky enough to have leftovers, they’re perfect for lunchboxes the next day.
