The wonderful & talented chef, Seema Pankhania, is our guest spot today with a little chat below and 2 banging recipes just for us. Her brand new CRAVEABLE cookbook was released to great acclaim last week, it’s recipes that hit the spot for every craving and every mood. Recipe 1 - The French onion Gnocchi (scroll down to make it)
Seema says: When it comes to winter soups, French onion soup reigns as the undisputed king. The slow caramelization of the onions is a labour of love in itself, resulting in a deep, rich flavour that’s worth every minute. The beautifully caramelized onions are paired here with tender gnocchi, all swimming in a hearty stock infused with the umami goodness of miso and earthy mushrooms. It’s the kind of comforting meal that warms you from the inside out.

Seema says: Dumplings and cabbage rolls are a universal love language. Fillings wrapped in parcels can be found in cuisines all over the world and I’ve combined cabbage rolls with my love of dumplings. It’s a simple yet deeply satisfying meal, brimming with hearty vegetables. Feel free to make this dish completely vegetarian by swapping the chicken mince for crumbled tofu or using your favourite minced protein. You can also toss in any finely minced veg, such as spinach, carrots or celery - the perfect way to clear out your fridge.
