As I’m sure is the case for all of us, my mum has taught me so much, both in and out of the kitchen. One of the most valuable lessons she passed on to me is how to be thrifty and minimise waste. Growing up, her mantra was ‘every grain of rice’, whether it was on the plate, left in the cooking pot or stuck to the spoon. She froze quality discounted meat, stretched a chicken into three meals for our family of four, fed us the most affordable fish - mackerel, anchovies and sardines (the oils being best for our brains she said) - and every weekend the leftover contents of the veg drawer were emptied into the soup pot.
