It’s beginning to look at lot like Easter! The shelves are piled high with hot cross buns (my favourite, I always stash away as many as possible in the freezer to enjoy long after Easter) and chocolate eggs. So I’m fully embracing the celebrations this week with a recipe for Easter cookies. They’re made with speckled chocolate eggs, some chopped and stirred through the batter and some pressed onto the top of the cookies before going in the oven, a task which is well suited to little hands if you’re baking with kids. Plus, they’re made in just one bowl so there is very little washing up - always a bonus! I hope these bring some chocolatey joy to your Easter.
