When I returned from hospital with baby Summer, my amazing doula Deanne made me these chai banana flapjacks as fuel for the exhausting, incredible, world-tipping post-natal days. Those days seem like a total blur now, but one thing is for certain: these delicious flapjacks were quite possibly the thing that got me through.
Deanne has kindly made me many more batches since then and, even more kindly, is sharing her recipe with all of us today! They’re chewy, they’re slightly sticky, they’re perfectly spiced, they’re loaded with goodness - frankly, they’re my perfect snack. Whether you’re breastfeeding or not (they would also be great as an on-the-go breakfast, as an after-school snack, or as a pick-me-up for that 4pm slump we all know too well), I think they may be your perfect snack too.
