Valentine’s Day is fast approaching and I can’t think of a better way to say “I love you” than with a big slice of chocolate cake. I’ve been working on this recipe for a loooong time, testing and retesting, and I think (hope!) I’m finally there. It’s inspired by the classic Italian flourless chocolate torte, Torta Caprese, which uses ground almonds and whisked eggs whites to give a lovely light cake with a slightly crackly top. I like to serve mine with big dollops of creme fraiche and extra chocolate shavings. I hope you, and your Valentine/Galentine/Palentine, love it.
