Mac ‘n’ cheese is pure comfort food, perfect for days when you just need to curl up on the sofa and feel cosy. I love loading mine with veg and this butternut squash and cauliflower variation is my current favourite. For maximum flavour and minimal waste, use every bit of the cauliflower - florets, stalks and leaves. When it comes to the cheese, you can be fairly flexible and use what you’ve got as long as it’s full-flavoured such as mature cheddar or gruyere.
