Hello and welcome back! Thank you for your patience with my newsletter pause over February as I beavered away on a very exciting new project that you’ll be the first to hear about later this month! I’m very excited to now resume normal service with you here. So without further ado, onto today’s recipe.
Chickpea flour (also known as gram flour) is one of my favourite storecupboard ingredients - it’s budget friendly, adds a little extra protein to whatever I’m cooking or baking, and I’m pleased it’s become much more widely available* over the years. Below I’m sharing the recipe for a spiced chickpea pancake that is loaded with lots of sliced veggies, inspired by (but in no way an authentic version of!) Japanese okonomiyaki. I’ve included red onion, carrots and celery, largely due to the fact that I always have these hardy winter veggies on hand, but you could swap them for whatever you have in the fridge. This makes one large pancake which can be sliced up for snacking or served with a fried egg and salad/greens as a simple working from home lunch or speedy dinner.
*Most supermarkets stock chickpea/gram flour but if can’t find it at your local shop, it’s easily available online.
Makes 1 large pancake which cuts into 4-6 slices
