This makes a big, hearty pot of lentils to see you through the week. Whenever I take the time (not long, only 45 minutes) to make a recipe like this, I think of it as a gift for my future self. You could also share a few portions with a loved one, who wouldn’t be grateful for a cosy bowl of stew?!
